Baked Pepita Omelet
This baked pepita omelet is a delicious, fun, and versatile recipe that's easy to make and super nutritious. It's based on a Japanese style omelet called Tamago, and it's a great plant based recipe to have in your culinary arsenal. I originally developed it as the egg component for the vegan breakfast sandwich we served at Celest Cafe back in 2018, and it's been a staple in my repertoire ever since. It also makes a great addition to sushi rolls, breakfast tacos, burritos, chilaquiles, and more!
